A winner, artichoke pasta and chili sweet mango noodles

Artichoke pasta in Planet Box

I made a fresh batch of spinach pasta for my girls this morning.  They like to change up the sauce so this time I used about 1 teaspoon of artichoke antipasto sauce from Trader Joe’s and just mixed it in with the pasta.   You can also do this with olive tapenade.  It can be oily and very salty so make sure you use it sparingly.  In her Planet Box with pasta are nectarines to the left, dried apricots (dried cranberries in the small stainless container, a lemon macaroon, a mini french toast (homemade) muffin and sugar snap peas.

Fruity snack bento

For snacktime, Miss G has a 2 tiered bento box with organic fruit, strawberries and raspberries.

Artichoke pasta with dates

Miss A has a similar lunch with the same spinach noodle artichoke pasta.  To the left in her Planet Box Rover are sugar snap peas, a mini muffin, dates, dried cranberries, a lemon macaroon, plum sections and raspberries.

Chili Sweet Udon in ELB

My husband had dinner leftovers. I made Happy Herbivore’s Chili Sweet Udon Noodles from her Everyday Happy Herbivore cookbook.  I can highly recommend all of Lindsay Nixon’s cookbooks.  I own them all, many are family friendly and almost all are simple recipes without crazy long lists of ingredients.  Dinner in 30 minutes.


I did find another blog here that replicated her recipe too.  It was simple and delicious!

Quesadillas and some stir fry
