Long overdue heart lunches

My food projects are my passion, but very often family comes first.  So it’s been a while since I’ve posted, and I’ve missed you!  I decided to post all the lunches today that I did for before Valentine’s day and didn’t post.  After all, I love my kids all year long so the heart thing never gets old to me.

Black beans and potatoes with hearts

Miss G had dinner leftovers in this lunch.  We had balck beans, potatoes, corn, tomatoes and cumin flavored dinner.  I topped it off with a few carrot hearts punched out.  The mini hearts were used in little sister’s lunchbox.  In the top of her Easy Lunchboxes container are a peeled tangerine and rosemary bread slices.

Love you lunch

Miss A has a mini “Love You” sandwich on whole wheat with WOWbutter and jam.   She has orange and yellow mini carrot hearts, sliced strawberries, and a silicone heart cup with vanilla chia seed and almond milk pudding in it.  In the top of the Easy Lunchboxes container are pineapple pieces and blueberries.

Black beans potatoes and corn lunch

My husband had the black bean and potato leftovers too in his Easy Lunchboxes container with rosemary bread and local blueberries.

CuteZCute bear with bow & hearts

For this sandwich, I used my panda pocket sandwich cutter and used the CuteZCute panda face to cut the mouth out of the bread.  Instead of the regular eyes, I used a small heart cutter for the eyes and stuck in a bow pick to make it extra girly.  In the rest of of her Easy Lunchboxes container are a cacao treat with Rilakkuma Japanese bear pick, grape tomatoes and in the top are organic raspberries and strawberries. Tucked in with the lunch is a Lunchbox Love note for her.

Be Mine pocket sandwich This lunch is made with a scalloped heart pie mold.  I pushed the Be Mine in before making the pocket.  My little one has macadamia nut butter with agave in Rudi’s Organic whole wheat bread.  In the small heart container are goji berries and raisins.  And in the top of the Easy Lunchboxes container are organic raspberries and strawberries. She also has a Lunchbox Love note in her lunch.

Heart pita and Sabra hummus

For snack time, I made pita hearts and threw in a mini container of Sabra hummus.

Wholly Guacamole with scalloped pita hearts and cucumbers

Little sis has a similar snack of mini scalloped heart pitas, heart shaped cucumbers and Wholly Guacamole to dip them both in.

Things I used to make these lunches:

Grilled (dairy free) cheese all around

I was running low on groceries, and I happened to have some Daiya brand dairy free cheese shreds in my refrigerator. We try to keep processed and oily foods out of our diet as much as possible so this is a rare occasion for us. It was a foggy, chilly morning yesterday so the kids Continue Reading

Scalloped heart pocket and mini hearts for lunch

I’ve been trying to squeeze in a few Valentine themed lunches before the day hits.  Some days (like today) are gray, rainy and blah.  I know most of you are enduring extremely cold weather and awful storms so I hope these brighten your day a bit.  Hoping it cheers my little ones too. Miss A, Continue Reading

Tomato veggie wraps and mini love lunch

Miss G informed me that she is SICK of peanut butter.  She doesn’t want it any more.  I have to admit that my lunches (although cute) have lacked in variety lately.  I found this delicious sundried tomato spread at the farmer’s market Saturday.  I decided to build the lunch around it.  I used a whole Continue Reading

I heart lunches

Lunchboxes are my small way of telling my kids how much I love them even when they’re not at home.  To me, it seems like a small thing to do when I can find the extra 5-10 minutes in the morning to “cute up” their lunches and pack in as much nutrition as I can. Continue Reading
