Welcome to Wednesday! My family’s having leftovers for lunch. I made Gia Russa brand mini potato gnocchi for dinner. I love making gnocchi because it cooks so quickly and it doesn’t take a lot to fill the family up.
I stirring in some fresh dairy free pesto sauce and added kalamata olives and organic grape tomatoes. In the top of my husband’s Easy Lunchboxes container are fresh peaches and blueberries from King Family Farm here in Bradenton, FL that we picked last weekend.
For little Miss G’s smaller version she has the same mini gnocchi with edamame added on the right. On the left side of her LunchBots Pico are pineapple pieces, blueberries and raspberries.
And Little Miss A has a LunchBots Trio packed with peaches and blueberries, mini gnocchi with kalamata olives and edamame and pineapple and kiwi in the bottom compartment of her preschool lunchbox.
